Super Easy 2 Minute Microwave Fudge Recipe

Fudge is one of the most decadent desserts out there. Seriously! Especially chocolate fudge. It’s creamy, it’s sweet, it’s chocolatey, it’s the ultimate dessert that’s perfect for an after dinner treat or simply when you have a sweet tooth or chocolate craving. It’s even perfect to gift to your loved ones, if you’re the sharing type.

But making fudge doesn’t have to be complicated, especially with this recipe for microwave fudge. It literally takes about 7 minutes from prepping all the ingredients to getting it in the fridge to chill it. The hardest part of this whole ordeal, will be to wait at least one hour for the fudge to chill and set so you can cut it up in pieces and enjoy.

Ingredients You’ll Need

Icing Sugar – Same as powdered sugar or confectioners sugar.
Cocoa Powder – Choose a good quality cocoa powder for the best results.
Milk – Regular whole milk or lactose free milk will work.
Butter – 1 stick of salted or unsalted butter, straight from the fridge.
Salt – Both regular salt for mixing into the fudge and flaky salt for sprinkling on top.
Vanilla – Extract, paste, or fresh vanilla bean. Don’t skip this, it will totally bring out the chocolate flavor!
Pecans – You’ll want some roughly chopped pecans or walnuts. These are optional, you can make it plain or add in your favorite nuts.

How To Make Microwave Fudge

Prep. 

Spray an 8 x 8 inch baking dish with cooking spray and line it with parchment paper, leaving a 2 inch overlap on the sides, so you can easily pull the fudge out.

Sift the dry ingredients.

In a microwavable bowl, sift the powdered sugar and cocoa powder. Add the salt and mix.

Incorporate the milk. 

Add milk and vanilla extract and using a plastic spatula or wooden spoon mix everything together. You’ll have big lumps and still some of the powdered sugar and cocoa will be dry but don’t worry, that’s ok.

Microwave.

Place the butter on top, just a butter stick right out of the fridge, doesn’t need to be melted. Place the bowl in the microwave oven and microwave on high for 2 minutes.

Mix the fudge and add pecans. 

Remove the bowl from the microwave and using the spatula or wooden spoon mix it all together until smooth. When you first take it out of the microwave, you might still see a big chunk of butter, but that’s ok, keep on stirring and the butter will melt. You’ll notice as you’re stirring the mixture will quickly thicken. Stir in the pecans.

Transfer fudge to a baking dish. 

Transfer the fudge to the prepared baking dish and spread it evenly. Sprinkle with fleur de sel or any flaky salt, if preferred..

Chill before serving. 

Refrigerate for at least an hour or until it sets. Cut into pieces and serve.

Expert Tips

Make sure you leave “handles” of the parchment paper to grab onto to make lifting the fudge out the pan easy.

Let your fudge set in the fridge- don’t try to speed up the process in the freezer. Slow and steady wins the race!

You can use different sized pans depending on how thick you’d like the fudge to turn out.

To easily cut the fudge, right a sharp knife under hot running water first, wipe it clean then cut.

Can I Freeze Fudge?

Fudge will freeze well! Place the pieces of fudge you’d like to freeze on a foil lined baking sheet, with space between each one. Freeze for 1-2 hours or until almost solid. Wrap the fudge in the foil, then transfer it to an airtight container or sealable freezer bag. Your fudge will last 6 months – 1 year frozen.

Let the fudge thaw slowly overnight in the fridge when you’re ready to enjoy it. This will help prevent the fudge from sweating and getting too soft as it thaws.

How To Store Fudge

Your fudge will last up to 2 weeks stored at room temperature. Keep in an airtight container or sealable bag in a cool, dark place. Leaving it out on the counter, possibly exposed to warm sunlight, can cause the fudge to sweat and become mushy.

The fudge will also last 3-4 weeks in the refrigerator. Keep it in an airtight container or a sealable bag. When you leave your fudge in the fridge, it will end up with a chewier bite versus a softer bite when left at room temperature. You may prefer either or; it’s up to you!
